Carly Lauder moved to the country 9 years ago. Sick of the commute to Melbourne she put down roots in Castlemaine where she managed Public Inn for just over four years.

Her passion for cooking led her to Bress Wine, Cider and Produce in Harcourt, where she ran the kitchen on weekends, using produce from their garden and cooking outdoors in wood fired ovens and spits. During her four years at Bress, Carly created relaxed, educational and interesting events at the winery and in Melbourne promoting Bress’ wines and ciders.

Most recently she has worked alongside Annie Smithers and the small team at du Fermier in Trentham, helping Annie with prep and engaging customers on the floor with Annie’s story of farm to table food and the delight in simple produce, cooked from the heart with minimal fuss.

During her time at Du Fermier, Carly catered many weddings and events as a part of her own catering business. She has put that aside to focus on her involvement in the Theatre Royal’s Bistro Lola, where she plans to cook simple Italian fare for everyone, focusing on local produce with food that brings people together for a shared dining experience. Carly has enjoyed 23 years in the hospitality industry and looks forward to being involved with the dynamic team at the Theatre Royal as part of her next adventure.
